Partnership instead of trade – quality with origin and structure

For ARONA, coffee is not a spot market product, but a conscious decision to form a partnership. Together with Endebess Coffee, we work directly at the source in Kenya – for the long term, transparently, and without intermediaries.

Direct from the source – controlled quality from Kenya

The coffees originate from defined high-altitude areas with ideal climatic conditions. Cool nights, consistent rainfall, and mineral-rich soils provide the foundation for slow maturation and pronounced aromatic complexity.

However, it's not just the location that's crucial, but also the collaboration: ARONA is regularly on site, accompanying cultivation, harvesting, and processing, and working closely with the responsible teams. Transparency and structure replace short-term trading logic here.

The focus is on clearly defined varieties such as SL28, SL34, Ruiru 11 and Batian, which are grown, processed and sensorially evaluated separately. This results in green coffees with stable profiles, high aromatic clarity and industrial reproducibility.

In addition to sensory evaluation, physical and quality-relevant parameters are controlled on a batch-by-batch basis, including moisture content, bean size, density, and defect levels. This structured quality management ensures reliable further processing in industrial roasting and extraction processes.

Depending on the batch, the coffees are available according to Rainforest Alliance, Fairtrade International, and Starbucks Qualified standards. These certifications are an integral part of quality and risk management – not an add-on, but a prerequisite.

Technical specifications

The defined varieties and controlled preparation form the basis for stable roasting performance. Through homogeneous bean sizes, defined moisture values, and structured batch management, the green coffees exhibit consistent roasting behaviour with controllable heat absorption and reproducible colour development.

In extraction, the coffees impress with stable solubility parameters and clear aroma release. Depending on the roast profile, they enable precise control of acidity structure, body, and aroma intensity – both in traditional drum roasting and in continuous industrial roasting systems.

This technical stability is crucial for industrial applications requiring consistent sensor data, predictable processing times, and constant extraction values.

Frequently Asked Questions

What qualities and forms of preparation are available?

The coffees are managed as single varietals and by batch. Raw coffees from defined varietals such as SL28, SL34, Ruiru 11 and Batian are available.
Depending on the origin and treatment, different process variants can be used, for example:

  • washed
  • halbgewaschen / pulped natural
  • Natural / dry processed

The respective batches are specified with regard to bean size, moisture content, defect percentage, and sensory profile.

Are certified qualities available?

Depending on the batch, coffees are available according to recognised sustainability and sourcing standards, including:

  • Rainforest Alliance
  • Fairtrade
  • Starbucks Qualified Standards (C.A.F.E. Practices)

The certifications are documented on a batch-related basis and serve to ensure sustainability, traceability, and supply chain compliance.

How stable is coffee in industrial processing?

Through pure varietal batch management, defined physical parameters and controlled processing, the raw coffees exhibit stable roasting behaviour and reproducible extraction properties.

Key quality parameters include, but are not limited to:

  • Moisture content
  • Bean size / sieve fraction
  • Density and bean structure
  • Defect percentage
  • Sensory profile

These parameters allow for stable integration into industrial roasting and extraction processes.

How is the quality of raw coffee ensured?

Quality assurance is carried out through a combination of origin control, physical analysis, and sensory evaluation. Batches are checked for parameters such as moisture content, defect percentages, bean calibration, and cup profile before release. Regular presence at origin and direct collaboration with producers ensure a transparent and controlled supply chain.
